From a traditional coconut rice to crispy prawns to share, Hotel Las Islas offers a wide menu that provides an unforgettable experience to all of your senses. Along the naturally sophisticated atmosphere, our 3 restaurants: Restaurant-Bar Choco, Las Guacas and Tía Coco offer a personalized, natural and healthy dinner that will take you back in every bite to the origins of the Caribbean of Colombia.

Our cuisine offers a fusion of traditional Colombian cuisine with a creative contemporary touch of international techniques, creating a different gastronomic offer in all of our recipes, without losing the essence or flavor of the region, essence that you will be able to taste in every single one of our restaurants. 

At Tía Coco, you can enjoy a breakfast buffet where you will find national and international food, with all the Caribbean taste.  From a delicious arepa de huevo accompanied by traditional suero costeño, to different types of breads, such as banana, coconut and baguette, among other multiple options. In addition, there is a variety of Colombian fruits of the best quality.   


In the afternoon, we invite you to Choco, the restaurant that offers a relaxed and welcoming atmosphere, the perfect scenario to be in contact with the sea and nature, while trying a fish brought directly by the fishermen of Barú with the best of artisanal fishing. Enjoy a ceviche or grilled octopus, accompanied by the most refreshing drinks, such as a Coconut lemonade or a delicious Caipirinha.

You can also enjoy a snack at Las Guacas and try the most refined local and international recipes, meticulously designed by our chef. Within our menu you will find the Sancocho Barú prepared with a fish meat concentrate, hogao fused with patacón and bathed in a foam of coconut milk and suero costeño.  Each one of our dishes creates a different gastronomic offer without losing the essence of the barulero´s flavor.

Maze yourself with all the different flavors among a variety of menus and specialties of the chef, who prints a well-defined local identity to his dishes according to the season, as he does on these must-taste dishes:  ​

1. Isla Fiesta, a grilled lobster in garlic butter, which you can select directly from our Hatchery
2. Cazuela isleña, with all the flavor of seafood, hogao, coconut milk and patacon   

3. Langostinos Crocantes, accompanied by a traditional Caribbean sauce
4. Canastitas Las Islas, stuffed with Caribbean-style seafood, in coconut milk mother sauce
5. Camarones al ajillo, a pair of garlic shrimp, accompanied by coconut rice 

6. Pargo en brasas, with vegetables and aromatic herbs in our wood oven   
7. Pulpo a la parrilla, grilled octopus accompanied by a pickled potato 
8. Pesca del día, fishing of the day served with lemon foam, coconut risotto and lemongrass
9. Coctel de camarones, shrimp cocktail in pink sauce, with a Caribbean twist

Likewise, we offer a buffet where you will find food stations that provide a tempting selection of products from local and international origin. Additionally we have a vegan menu, that hands joined with personalized attention will give your experience an additional portion of authenticity.


Print your identity at Caribbean cooking classes


While watching the sunset and listening to the sound of the waves, share a pleasant moment with the chef in the cooking class offered by Hotel Las Islas. Get a sustainable approach to cooking using the finest ingredients of the season and print the identity you want to the different traditional Caribbean preparations.   

​Let yourself be guided by our chef to the port, where you will receive every type of seafood brought by the fishermen of Barú. Then, go to our local orchard and choose all the ingredients you will need for the class recipe. Definitely, no matter which dish you choose during your stay, you will enjoy an exotically natural and healthy dinner, taking with you a memory of the Caribbean flavor, wherever you go. 

 

Sustainable gastronomy, a culinary community


Faithful to our commitment to sustainable tourism and to the environment, we also want to contribute in the gastronomic field, with practices that are reflected in the freshness of the products and locally grown ingredients served at the table. On one hand, all the seafood is handcrafted fish from the waters of this region.

In addition, we have an orchard inside the hotel, where we have a diversity of vegetables such as tomatoes, cucumber, some fine herbs, among other vegetables that provide in each recipe the taste that only Colombian cuisine has.


Sustainability goes hand in hand with a social workforce, which is why our work team is mostly made up of Barú natives, who have acquired an ancestral tradition for generations and have been discovering and knowing what the current gastronomic reality is like, by what they have trained in food manipulation, preparation, assembly of dishes and table service. We have managed to take, for example, a wood-fired sancocho to present it in a sphere or a fish embedded in coconut and in banana, preserving the ingredients and the technique. Imagination flows, we don't limit ourselves, we do not keep the fried fish, now we grill it in a Bijao leaf or “crust it” or we put it in a coconut and then into the oven. There are no limits.
